simple design
I love the simple pattern of a zucchini cut open. Yes this is a zucchini, a yellow zucchini. It kind of reminds me of those old fisher price record players with the notches on the records. I made this for dinner. It was so good, even though I forgot the beans and almonds. And yes, that is the kind of stuff I have on hand around here. The tomatoes and zucchinis came from my garden.
everyday lately
This is what my days have been looking like lately. All finances and catching up. I am getting on top of it though. Thank goodness for accountants and friends who know accounting. To bad I failed accounting in college. This should make a little sense since I had to take it twice. Oh well. Shortly I should be back on top of my finances.

fresh summer food

The garden is going well. These are blossoms from potato plants. I cut up the potatoes that were growing legs in my pantry and put them in the ground and this is what happened. Can you even believe it? It amazes me what will come out of the ground, and these burst out of the ground. It really was astonishing how a full bush rose out of the ground, complete with leaves and flowers. They didn't even start as little buds or sprouts.

Yesterday we went and pulled one zucchini and two yellow zucchinis off their plants and ate them for dinner. We grilled them with an onion and butter and BBQ3000. And well, it was so good. I love the summer fresh foods that I can harvest from my own garden. And aren't nectarines pretty much like candy growing on a tree? Oh my word, I love summer food.

making jam
I made freezer jam today, I am so proud. My mother in law makes it and I always inhale it when I am up at her house. I thought I would make my own to breath in. It is strawberry/blackberry. The blackberries shot little purple spots all over the kitchen.

The jam is so pretty in their little bottles I waited all afternoon for the sun to come in my front windows so that I could take pretty pictures of it glowing like jewels.

jj is in the other room making pumpkin purée for pies. Then he will begin on pie crusts with coconut oil instead of butter, which will be so good. He is making pumpkin, pecan and apple pies

I am about to start preparation on this stuffing with craisins, apples, sausage and real bakery bread, or I may begin work on the cranberry sauce with pineapple, apricot jam, and apples. mmmmmmmmmm. Isn't holiday food divine? What are you making?

The Corner Office

jj and I went to The Corner Office for brunch Sunday morning in downtown Denver. It was fabulous.

jj had the belgian waffles with spiced pumpkin spread between them with nutmeg maple syrup. I had french toast with peanut butter, chocolate and bananas with maple syrup. jj's was better, but mine was delicious also.

If you are ever in the Denver area it would be totally worth the stop.

Blast your bottom half

I ripped this workout out of SELF Magazine, an old one. I love these walking workouts. Same runners high, way less intensity.

I did this work out this morning and sweat so much I was embarrassed. I can already tell I am going to be sore, which I love and I incinerated calories.

5 minutes Warm up at 3 mph and a 1 percent incline. Gradually increase to 3.6 mph and a 2 percent incline.
10 minutes Increase incline 2 percent every 2 minutes until you're at 12 percent.
2 minutes Maintaining incline, decrease speed to 2.5 to 3 mph. Holding handrails, step off the belt. Turn around and walk backward.
1 minute Holding handrails, step off the belt. Turn around and walk forward.
4 minutes Raise incline to 15 percent, speed to 3.5 mph. Do stride intervals: Alternate 1 minute of short strides, 1 minute of long strides. Repeat.
3 minutes Reduce incline to 10. Do speed intervals: Alternate 1 minute at 3.5 mph, 30 seconds at 4.5 mph. Repeat.
6 minutes Reduce incline to 6 percent, speed to 4 to 4.5 mph. Decrease incline 1 percent until it is flat.
8 minutes Increase incline to 1 percent; maintain speed. Increase incline 1 percent every minute until it is at 9.
6 minutes Decrease incline to 4 percent. Do four of the following speed intervals: 1 minute at 3.5 mph, 30 seconds at 4.5.
5 minutes Reduce incline to 1 percent. Each minute, decrease speed by 0.1 to 0.2 mph until you are at 3 mph.

Best! Grilled Cheese Sandwich Ever

4 oz. extra-sharp cheddar cheese, shredded
1 jar (4 oz.) pimentos, drained and finely minced
1 1/2 Tbs. finely chopped green onions, white and green portions
1/2 tsp. salt
1/8 tsp. cayenne pepper
Pinch of black pepper
2 Tbs. mayonnaise

Thin sliced ham (optional)

Large buns with sesame seeds (they are more pretty this way)

In a bowl, combine the cheddar cheese, pimentos, green onions, 1/2 tsp. of the salt, the cayenne and black pepper. Stir in the mayonnaise until incorporated. Refrigerate the pimento cheese until ready to use.

On are large skillet grill the inside of the bun on a low heat. Be careful not to burn. When inside of bun is warmed and slightly brown turn over and scoop cheese onto inside of bun and place some ham on top if you would like it. Place other side of bun on top and continue flipping until most of the cheese is melted.

Let cool slightly and eat. This is divine. JJ discovered it.

You can also put the topping on hamburgers when making them on the grill. This is also divine.

Exercise

I work out everyday except Sunday, and even then I try to get a walk in.

This is how it works. jj gets up at 7:00 and works out. I get up and 6:30 and read and go potty. When he gets home on Monday, Wednesday, and Thursday I go work out at the local gym. When I get home he leaves for work. On Tuesday and Friday I do the video Slim Physiqueand sometimes a 15-minute segment from
I Want That Body.
On Saturday I do Get Ripped 1000.It is a major workout that is sure to make you sore.

On Monday, Wednesday and Thursday I do these workouts. I rotate. I ripped these out of Self Magazine a few years ago and have been doing them for about a year. I am impressed with how I look, if you can call it that. I don't like my rear, I have flabbish arms. I have a hard time controlling the intake of food, but I feel like I am really fit and I am proud of what I look like. I would wear a bikini to the splash pool if I had the guts to be seen in one.

I am sneaky

As I have mentioned before, I have a son who is beyond picky with his eating. I have a really hard time getting him to eat anything that is not corn chips or fruit. He usually has big plates of air for breakfast, lunch and dinner.

I received The Sneaky Chef in the mail on Friday. I have made three recipes from it and the boy has eaten them all. He has had garbonzo beans, avacado, wheat germ, spinach, and blueberries all cleverly disguised in foods he loves. It is amazing.

These are brownies that have spinach, blueberries and lots of good grains in them. I was very skeptical of them, but they are actually quite good. I do feel like they need frosting, but that would kind of defeat the semi-healthiness of them. By semi, I mean that they still have chocolate and sugar in them, but a lot of the sweetness comes from blueberries. There is actually very little sugar and you cannot taste the spinach.

I would say this is 5-star recipe and I think that this is going to be my brownies of choice from now on.

Mr. Bento

I packed a Mr. Bento lunch for jj yesterday.


In jj's lunch there is edemame with a small container of soy sauce, sushi pizza, dried mangoes and Carob Fudge that is to die for, and a sliced apple.

Mr. Bento is a Japanese lunch box. It comes from the Japanese way a cooking and compartmentalizing different foods. You can view here, here and here.

Mr. Bento is especially nice because it has four different containers that you put in a larger stainless steal container. We put the stainless steal container in the fridge over night and it keeps the food that we put in it cold all day long. It also makes you feel very on top of things to have lunch prepared the night before, you can just grab it and run out the door. The smaller containers each have different purposes, there is the rice container, the liquid container with a rubber ring around it to keep things in or out, and then two smaller container for what ever else you would like.

We initially only bought one for jj, but I go out occasionaly and felt left out. So we got me one also. Usually jj just rotates between the two. When I need one I fill it with food for me and Gentry to take. The other day we went to Discovery Gateway, up where they have the helicopter on the deck we pulled it out and ate it. I had a spinach salad with raisins, cashews and blue cheese dressing. Gentry had his usual of corn chips and salsa. We shared an orange and some mango slices and were ready to go and play some more. It was also nice because it fit in the backpack that I had with me and I did not have to pay the astronomical McDonald's prices for the food that was in the museum. The food was also nice and cold, like I had just gotten it out of the fridge.

Carob Fudge (from Simple Foods For the Pack)
1 cup sunflower seeds
2 tablespoons carob powder (I just used cocoa powder)
2 tablespoons honey
1 tablespoon water

Put seeds in a food processor and grind to a powder. Add remaining ingredients and blend well. Store in a lidded container.

Optional: Add 1/4 cup shredded coconut.

She's a tad anxious

The other day, I made dinner for a friend who had a baby recently. I made soup and tried to make bread sticks, but forgot to put the yeast in. Duh. So then at the last minute I made biscuits, but they had to much liquid in them and had the glossiness of billiard balls. Obviously they were unacceptable. So they I ran down to Harmon's "The Grocer in your neighborhood!" and bought some of their artisan bread and some pears. I felt like such an idiot taking dinner over that I had not completely made myself. Why do I have such high expectations for myself? I don't know.

I left them with the pears, bread and soup. I bought a couple of pears for my family as well and when I cut them open the next day they were completely brown inside. Now I was a complete ass hat. So I called and left a message, begging her to let me try making dinner again. I really could do a better job and wanted to redeem myself. She did not call me back. For apparent reasons she no longer wanted to be my friend. This is really the way that my mind works.

I saw her at church today and she said that her husband loved the soup, wants the recipe and that their pears were fine. I feel better, but I seriously stressed about this since Thursday when I took dinner over. And I still want to try again.

Here is the recipe for the soup. It is so good. We keep a lot of the ingredients hanging around so it is pretty easy for us to throw together.

White Bean Chili
will give you gas.

3-4 chicken breasts, cubed
1 1/2 teaspoon garlic powder
1 tablespoon oil
1 medium onion, chopped
2 cans Great Northern beans, rinsed and drained
1-2 small cans green chilies
1 teaspoon cumin
1 teaspoon oregano
1 teaspoon salt
1/2 teaspoon pepper
1 (14 oz.) can chicken broth
1 cup sour cream
1/2 cup whipping cream

Combine chicken, garlic, oil, and onion in skillet and heat until chicken is cooked. Add beans, chilies, spices and cihcken broth; bring to a boil. Simmer 30 minutes. Add sour cream and whipping cream and heat through.

Another year, the same goals

It has been a good year. I am humbled by all that we have. We have worked hard this year and I feel like we have been blessed in so many ways. I am thankful to our families and friends and all that they do for us.

Here are last years resolutions.

Here is how thing went.

1. I did not run the Blacksmith Fork Freedom Run. I did run the Step Rock Run in Herriman City. I am very proud of it. Since then I have worked out about 5-6 times a week. I am very proud of that.

2. I have not yet figured out the budget, I am reading a book called The Automatic Millionaire and have made several steps toward being world travelers when we retire. Hopefully we pull it together and make it happen. It is all about paying yourself first. This year we started an IRA for jj and we are going to start contributing more to it soon. We have figured out all the debt and are working on getting a good handle on it. I have been also using coupons and cutting out all the things that we don't need like $6.00 per gallon milk. It is the small stuff that makes the difference. I am the proud of the progress that I have made this past year.

3. I am still working on being organized. I have gotten rid of tons of stuff. We even started selling stuff on Ebay just to see if we could make some money doing that and suprise, suprise, we can. I made about $50.00 last week selling stuff that we never use or don't like. It is quite a bit of work for that little bit of money, but if I had just given it to DI I would not have that money. Now I am going through the house with a fine tooth comb seeing what I can sell and just get out of here. I have also come up with a cleaning schedule that I try pretty hard to stick to. It has helped a ton in getting things done and knowing what to do. I also add some other cleaning activity to everyday. Some small like clean out the silver wear tray, some large like clean all the windows. It just depends on the day and my mood.

4. Get good at the piano. This one fell to the wayside. I want to do this, but I need to find a place in the day the squeeze it in. We will see.

5. Be able to tell people to go to Hell! I didn't learn how to do this. My councelor said that this is agressive behaviour and it is not the best way to be. So I am working on just being positive and honest, it is a better way to be.

I am proud of the progress that I made this year. There are a few other things that I want to work on with the business and really getting ourselves in a good financial state.

I am going to keep working on these, I am excited for the progress that we will make this year.

Also, there is the part of my life that I am dreading that is coming up rather to quickly. POTTY TRAINING! Egads. I am so frightened. But we are going to start trying it soon. I just need to finish and start the book that a friend recommended. I hope no one dies in the process. By the way the potty training is for the kid, not me, in case you were wondering.

Jingle all the way

For the first time in our lives we did Christmas at our own house, and the verdict you ask? I loved it. I don't know why we did not do it sooner, wait, yes I do. It is because I have never dared cook a Christmas breakfast myself. I did it this year and it was beautiful and delicious. Blessed are the quiche makers. That is what Papasan says. I made this for jj's family last Christmas and our family this year. We also had sticky buns that were drowned in butter and brown sugar (one of my favorite foods).

jj and I exchanged a few gifts, but going to Hawaii in November was our present for every event this past year. Gentry got a fishing pole, a panda bear, and another little bear. The bears must be with him at all times and we need to change their diapers occasionally and change their clothes also. I am thinking about making them some bear clothing, but mostly just thinking since I don't know how to do that sort of thing. He also got a little bear chair that must travel with us everywhere. It is a car seat for his bears. He has turned into quite the little mother.

On Christmas Eve we went to my mothers, she had a lasagna dinner and we just played and ran around until it was nearly bed time. We then went home and opened our new pajamas and read the Christmas story from a binder book that jj's mom helped us make.


Gentry got some great loot, so did jj and I from our family and friends. We are very thankful to you all. I am very excited about the pan with holes in it for french bread loaves. SO EXCITED!

The day after Christmas we went up to Logan where jj's parents live, we spent two days there. While we were there my little boy started cuddling with me. He has never been a cuddly boy and I loved it. I did not dare move in case he remembered that cuddling is not his thing and he better get the heck out of there. I wanted to close my eyes and stay this way forever.

We had a great Christmas.

Also, you may be wondering about my mom's "boyfriend," or not. He got my mom some nice presents, that was never something my dad could do. He always depended on me to choose stuff for him to buy. I was impressed that he had paid enough attention to her to understand who she was and what she likes. Also, I would rather hang round Mark than my dad. Mark complements my cooking, that may be all that I ever get from him but it is more than I ever got from my dad. And it is enough just to be noticed.

Rocky Mountain Chocolate Factory

We have all had apples dipped in caramel. Have you ever had a green apple dipped in caramel, dipped in white chocolate, rolled in cinnamon sugar? Oh my heavens, it is so good. I have a major sweet tooth for a little bit of tart and a whole lot of sweet. These delectable pieces of heaven are from Rocky Mountain Chocolate Factory. The nearest one to me is Trolley Square or the Gateway.

One of jj's co-workers got it for him for Christmas, bless her heart. Doesn't eating sin make you feel a little better if there is a bit of healthy in center?

Caramels

The caramels turned out wonderfully. They are very good and rich. So rich that you only want to eat a few of them and your sweet tooth is done. They actually required 3 hours of constant attention and then when they were finished cooking you could ignore them for a day to let them cool. I guess cooling takes that long. Anyway, they are done now and we have a huge amount of them. You can get the recipe here.

I was thinking that instead of book club this month we could do a Christmas Treat exchange. What do you think?

It's what's for dinner

Last night for dinner we had Inari Sushi and Sweet Potato Tempura. It was so good. Inari are little soy pockets that you put rice in and we put shrimp, spicy mayonnaise and green onions on top. Tempura is similar to onion rings except you can use almost anything. I love the fried sweet potatoes.

What a waste. I guess it really is an art and I am going to have to keep paying the artist tons of money to partake.

Drop it like a...Biscuit

Although I love bisquick, I gave it up when our last mega-box ran out. I just did not feel right about making biscuits out of what appeared to be flour and milk. It just did not add up to me.

So, today, in celebration of fall (I wish that it was not coming this quickly), I made homemade biscuits. I looked for recipes online because I do know that it is possible to make food with actual flour. Not everything has to come from a box or your local grocers freezer aisle. I found a recipe that called for 10 cups of flour. And I was terribly vexed by this. First of all, only two out of three people in my household eat actual food. Second, who wants to actually measure out TEN cups of flour. Third, what the heck am I supposed to mix that in. So that obviously was not the recipe that I made.

I did find another one that called for six tablespoons of mayonnaise. I was a little hesitant, but it only wanted two cups of flour. How reasonable and fair. I have also heard that mayonnaise is very moist when you cook with it. Some people use it in cakes, I am not one of those people. But I have heard of such things.

So this is what I did, and it turned out very well.

Drop Biscuits

2 cups self-rising flour
1 cup milk
6 tablespoons mayonnaise

or here is a healthier version (this is the one that I actually used)

1 1/2 cups whole wheat flour
1/2 cup unbleached white flour
1 tablespoon Baking Powder
3/4 teaspoon salt
1 cup milk
6 tablespoons mayonnaise

1. Preheat oven to 400 degrees F (200 degrees C).
2. In a large bowl, stir together flour, milk, and mayonnaise until just blended. Drop by spoonfuls onto lightly greased baking sheets.
3. Bake for 12 minutes in the preheated oven, or until golden brown. It took me about 15 or 16 minutes until they looked done.

We had them with a couple cans of Progresso soup. It was a yummy dinner.

Coconut Curry Tofu

Last night for dinner we had a banana split from here. I begged jj to let us go there again tonight for the same heavenly confection. He said no. So instead, we had Coconut Curry Tofu.



It was beyond good. I think that I will make it every week for a while. And it makes a lot.

Coconut Curry Tofu
2 bunches green onions
1/2 teaspoon brown sugar
1 1/2 teaspoon curry powder
1/4 cups soy sauce
1 1/2 teaspoon minced fresh ginger
2 teaspoon chili paste
1 14 ounce can coconut milk
1 pound firm tofu, cut into cubes
4 roma tomatoes, chopped
1/4 cup chopped fresh basil
1 yellow bell pepper, thinly sliced
4 ounce fresh mushrooms chopped
4 cups chopped bok choy

1. Do all the chopping of vegetables first.
2. In large skillet over medium heat, mix coconut milk, 3 tablespoons soy sauce, brown sugar, curry powder, ginger and chili paste. Bring to a boil.
3. Stir tofu, tomatoes, yellow peppers, mushrooms and finely chopped green onions into the skillet. Cover and cook for 5 minutes, stirring occasionally. Mix in basil & bok choy. Season with salt and remaining soy sauce. Continue cooking for 5 minutes, or until vegetables are tender but crisp.
4. Serve with rice.

I did not have ginger, so I used nutmeg. I used that chili paste with the chicken picture on the bottle. If you make this with tofu, get it from Wild Oats. It was so good, I have had it from other places and theirs was the best. But you could make it with chicken or anything else you wanted to use. I used a red bell pepper and canned mushrooms. To cut up bok choy you do it just like celery that you would use in chow mein or stew or something.

Try this though and if you don't want to make it, call me and I will make it for you.

Yum.

Also, I made this wedding announcement today for no one in particular. The flowers are from pictures that jj and I took while on a walk last Sunday. Natural habitat is so pretty.

I just made these wedding announcement for a couple. The names have not been changed to protect the innocent. But I really thought they were cute.



Variation on a theme.




Somosas, they are delightful little pockets of cauliflower, carrots, onions and curry wrapped in phyllo dough; homade roll and a Clif Nectar bar, they are so good; yogurt and frozen blueberries; carrots and celery.




Stuffed green bell pepper; devils food chocolate pudding and frozen raspberries; Macadamia nuts and some gross thing from Hawaii that jj loves; spinach salad with Italian dressing on the side.



Chicken vino bianco (from The Olive Garden); carrots and celery; yogurt and frozen blueberries; cantaloupe.



Steamed rice; Shrimp and veggie chow mien for the rice; nectar bar (yum); pudding and raspberries.



Chicken Cesar wrap from Wingers; pudding and raspberries; pear slices; spinach salad.



I made this for dinner one night. I only cook really well like once or twice a week and I always plan to pre-made or eat out nights into the week. These are from one of the nights I cooked. Salmon skewers on a bed of couscous, grilled zucchini, and lettuce. It was really good, but way to much zucchini was made.



Gentry also likes to watch me cook and he has picked up my habit for organizing food. He has placed our potatoes in the cup holders of the cooler.

Lunches for a week or more

Homemade Pitas and Anzac Bisquits. Yogos. Diana's Chicken and Sweet Corn Fritters. Orange sections, carrots and celery.



Homemade pitas and anzac bisquits. Annabel's Vegetable Fritters, these are made of sweet potatoes, pumpkin, potatoes, leeks and mushrooms. The kid ate them which is practically a miracle. Grilled chicken, carrots and celery. Mini 3musketeer, york peppermint patty and yogos.



Red leaf lettuce and grilled chicken. Pitas. Orange sections, carrots and celery. Pineapple jello with cantelope. Cesaer dressing. This made cesaer chicken pita sandwiches. It was good. I also had it for lunch.



Totinos pizza (I know, way less than healthy, but it tastes so good). Orange sections and caramel candy. Pineapple jello and cantelope. Annabel's Vegetable Fritters.



Pitas and starbursts. Edemame or soybeans, a yummy and high in protein treat. Chocolate pudding and frozen strawberries. jj raved about this. He just mixed it all together and inhaled. Hamburger patties with mushrooms, tomatoes and italian dressing in them. They were really good and did not need mustard or anything on top.



We are running low on food. I shop on Friday. Grilled chicken. Celery and carrots. Yogos. Chocolate pudding and frozen strawberries.

I have been going crazy with the cooking lately. I think because I am trying to get the kid to eat something. So I have been really researching healthy foods and things. The past two weekends I have baked up a storm.

Mediterranean Breakfast Bake which included the pitas, feta cheese, canadian bacon and a tomato cucumber salad. jj said that it reminded him of his church service in Russia and the food from there.



I also made rolls, but forgot to take a picture of them. They were heavenly. But this is what the yeast left in the bread mixer. Yeast is such a weird and cool thing. I also made a pineapple strawberry trifle and forgot to show that. It was dessert for Mother's Day.

Stuffing

Thanksgiving was great. jj made a pumpkin, apple, and pecan pies. I only tasted the pecan, because really why would you even make the others. It was very good. I made a turkey and some stuffing. I think that my turkey needed a bit of work, I thought that it would be amazing with all the cooking wine and butter I put on it. The name of the recipe is "Worlds Best Turkey," but I think it did not cook long enough. It was long enough to be safe, but not long enough to be tender. However, I did make some stuffing that was amazing. So good. The recipe follows:

Cranberry, Sausage, Apple Stuffing

Yum, it calls for vegetable broth, but does not say what to do with it, I dumped a cup on the stuffing in the pan before I cooked it. I also did not cook it inside the turkey. I really do not like the idea of shoving bread and otherwise good food into the internal cavities of animals.
